Biosynthesis of ascorbic acid in plants
As seen in the diagram above the biosynthetic pathway to ascorbic acid in plants but also in yeasts
is quite different from that in mammalian systems. The starting material is the same, i.e. glucose
but this is first converted to fructose and mannose and finally to galactose. Two different oxidases
convert the L-galactose to galactono lactone and ascorbic acid, respectively.
